A method of producing a canola protein isolate that has a canola protein content of 90 wt% (N x 6.5) d.b. and contain both the albumin and globulin protein fractions. The canola protein isolates are soluble and transparent in an acidic aqueous environment. The canola protein isolate is soluble in a beverage having a pH of 2.5 to 5 in phytic acid and can be used for human consumption, pet foods and aquaculture.
