The present invention relates to a method of manufacturing sausage by using agricultural products and, more specifically, to a method of manufacturing sausage by using agricultural products, capable of improving the stability and characteristics of sausage products by using fresh domestic agricultural products as ingredients for manufacturing sausage and mixing a plant extract, wherein the fresh domestic agricultural products and plant extract are used in a sausage manufacturing procedure. According to the present invention, since a plant extract is mixed and added during a sausage ingredient mixing and salting procedure, sausage products with balanced nutrition are able to be conveniently manufactured, and thus economic feasibility can be obtained. Also, since the stability and characteristics of manufactured products are improved, the products have excellent quality, and moreover, since domestic agricultural products, which are regionally farmed, are actively used, the present invention makes a contribution to the vitalization of the regional economy and creates the need for a stable labor force.본 발명은 우리 농산물을 이용한 소시지의 제조 방법에 관한 것으로서, 좀 더 상세하게는 소시지를 제조하기 위한 재료로서 신선한 우리 농산물을 이용하고, 식물 추출물을 혼합하여 소시지의 제조 공정에 이용함으로써 소시지 제품의 제조 안정성과 제품특성을 개선한 우리 농산물을 이용한 소시지의 제조 방법에 관한 것이다. 본 발명에 의하면 식물 추출물을 혼합하여 소시지 재료의 혼합 및 염지 단계에 첨가함으로써 영양의 균형을 이룬 소시지 제품의 제조가 용이하여 경제성을 제공하고, 제조된 제품의 안정성과 제품 특성이 개선되어 우수한 소시지 제품을 제공할 수 있을 뿐만 아니라, 지역 농가에서 사육하고 재배되는 우리 농산물을 적극 이용함으로써 지역경제 활성화에 기여하고 안정된 인력 창출을 이룰 수 있다.
