PROBLEM TO BE SOLVED: To provide seaweed which is recognized as seaweed by visual sensation, taste or the like, provides actual feeling when taking the seaweed and is softened so that they can be broken by only tongue in oral cavity and a manufacturing method of the seaweed.SOLUTION: There is provided a manufacturing method of softened seaweed which maintains appearance, shape and taste originally obtained by seaweed and has height of 50,000 N/m2 or less, including a process for contacting a solution containing one or more kind of phosphate or organic salts as a treatment liquid with seaweed and a process for removing the contacted treatment liquid.
