A presente invenção refere-se a óleo de arroz, farelo de arroz e sementes de arroz que têm níveis alterados de ácido oleico, ácido palmítico e/ou ácido linoleico. A presente invenção também provê métodos para modificar geneticamente plantas de arroz tal que óleo de arroz, farelo de arroz e sementes de arroz produzidas a partir delas tenham níveis alterados de ácido oleico, ácido palmítico e/ou ácido linoleico. Especificamente isto é obtido através da modulação da expressão de Fad2 e/ou FatB.
