PROBLEM TO BE SOLVED: To provide a processed vegetable product having enhanced sugar content and superoxide scavenging activity, and a manufacturing method thereof.SOLUTION: A raw material vegetable 1 is matured and blackened to make a processed vegetable product 3. Prior to a maturing process P2, the raw material vegetable 1 is subject to a process P1 for applying pulse magnetic field, so that the processed vegetable product 3 of which at least one of the sugar content and the SOD activity is enhanced can be produced.
