PROBLEM TO BE SOLVED: To provide an oil and fat composition for cooking that can inhibit oxidation due to heating and a method for producing the same, and a method of suppressing the degradation of oils and fats for cooking due to heating.SOLUTION: A method for producing oil and fat compositions for cooking includes adding alkali metal and tocopherol to oils and fats, where the amount of adding of the alkali metal is 0.1-5.0 mass ppm; for example, the alkali metal is added as fatty acid sodium; and the amount of adding of the tocopherol is 200-2000 mass ppm.SELECTED DRAWING: Figure 1【課題】加熱による酸価を抑制することができる加熱調理用油脂組成物とその製造方法、及び加熱調理用油脂の加熱による劣化を抑制する方法を提供する。【解決手段】油脂に、アルカリ金属と、トコフェロールとを添加し、前記アルカリ金属の添加量が0.1~5.0質量ppmであり、例えば、アルカリ金属は脂肪酸ナトリウムとして添加され、前記トコフェロールの添加量が200~2000質量ppmであることを特徴とする、加熱調理用油脂組成物の製造方法である。【選択図】図1
