PURPOSE: A producing method of soybean paste with grains using deep sea water and salt from the deep sea water are provided to offer mineral components to the soybean paste. CONSTITUTION: Soybean paste with grains contains 30wt% of fermented soybeans powder, 14wt% of glutinous rice, 2wt% of red pepper powder, 7wt% of malt, 45wt% of deep sea water, and 2wt% of salt from the deep sea water. A producing method of the soybean paste with the grains comprises the following steps: germinating wheat, barley, and soybeans with the deep sea water, and performing the aerobic fermentation for 4~5days at 40deg C； crushing the fermented soybeans to make the fermented soybeans powder； processing the glutinous rice with the deep sea water； crushing the malt, and filtering to make concentrate； adding the fermented soybeans powder, the rice, and the red pepper powder to the malt concentrate, for saccharifying； and washing the mixture with the deep sea water and, fermenting for 1 month at 10~15deg C.본 발명은 태양광이 도달하지 않는 수심 200m 이상의 깊은 곳에 존재하는 바닷물인 해양심층수와 해양심층수를 가열 증류시켜 만든 해양심층수소금을 사용하여 토종 장류식품인 쩜장을 제조하는 쩜장의 제조방법에 관한 것으로서,본 발명의 제조방법은 메주가루 30중량%, 찹쌀 14중량%, 고춧가루 2중량%, 엿기름 7중량%, 해양심층수 45중량%, 해양심층수소금 2중량%의 원료배합비율로 쩜장을 제조하되,밀, 보리, 콩을 해양심층수에 침지시킨 후 건져내어 상온에서 발아를 시키고, 발아시킨 밀, 보리, 콩을 혼합하여 증자솥에서 3시간 증자 후 숙자한 것을 40℃에서 4~5일간 호기성 발효를 시킨 후 발효된 원료를 잘게 분쇄하여 메주가루를 만들며, 찹쌀은 2~3일간 해양심층수에 침지시킨 후 증자솥에서 증자시켜 고두밥으로 만들고, 엿기름은 곱게 분쇄하여 해양심층수에 3시간동안 불린 다음 고운체로 걸러서 건더기는 버리고 맑은 윗물만 용량비율 1/2이 되게 달여 농축액으로 만든 다음 엿기름 농축액에 상기 메주가루, 증자시킨 찹쌀밥, 고춧가루를 혼합하여 당화시킨 다음 24시간이 경과된 후 당화된 상기 원료들을 염도 6~7%의 해양심층수로 청결하게 세척한 발효숙성 항아리에 8부 정도 채우고 10~15℃의 저온에서 1개월정도 발효, 숙성시켜 쩜장을 제조함을 특징으로 하는 것이며,이와 같은 본 발명의 쩜장은 국내 최초로 해양심층수와 해양심층수소금을 사용하여 제조되는 토종 장류식품인 것이다.
