PURPOSE: A method for manufacturing a fresh gastrodia fermentation extract is provided to manufacture the fermentation extract from the sap produced during the defrost drip of rapidly frozen fresh gastrodia through a biological reaction by fermentation microorganisms. CONSTITUTION: Gastrodia, which is the main ingredient, is washed and dried. The dried material is rapidly frozen for 4-30 hours maintaining the temperature at -40>;= to -70>;=. The sap is extracted by defrost drip by maintaining the temperature at 25>;= to 60>;= in a fermenter. The fresh gastrodia sap is mixed with fermentation microorganisms and distilled water in the fermenter. A mixture is produced by adding a nitrogen source and a carbon source needed for fermentation. The mixture undergoes a biological reaction in a bioreactor to produce liquefied lactic acid fermentation product. The lactic acid fermentation product is sterilized using a rapid sterilizer to sterilize the fermentation microorganisms. After impurities are removed using a diatomite filter, the lactic acid fermentation product is concentrated to have the sugar content of 25 to 60 Brix. The fermentation extract is dried with a spray dryer in order to have the moisture content of 5-7%. One nitrogen source is chosen among rice bran, barley flour, and wheat bran, and one carbon source among saccharose, maltose, and oligosaccharide.
