To provide an anesthetization method of fish and shellfish capable of expressing earlier an anesthetic effect to the fish and shellfish; and to provide a production method of anesthetic water.SOLUTION: Anesthetic water is produced by a step for adjusting a salinity concentration corresponding to an anesthetic object, to water, and further adjusting it to a carbon dioxide concentration showing an anesthetic effect.
