The present invention relates to concentrated rice rinse water jelly using concentrated rice rinse water. According to the present invention, rice rinse water generated in a large quantity during the rice processing process can be used as a functional food ingredient after being concentrated and sterilized. The concentrated rice rinse water jelly using the rice rinse water can be produced in a simple process, and thus manufacturing costs and time can be reduced. The jelly can contribute to improvements in public health particularly children when given as a functional food since the rice rinse water jelly comprises active ingredients of rice. The present invention provides a method of producing the concentrated rice rinse water jelly, comprising the steps of: soaking gelatin in water and boiling the water to melt the gelatin; adding concentrated rice rinse water, coconut and sugar to make a first mixture and boiling the first mixture; cooling the first mixture boiled in the previous step and adding the melted gelatin to the first mixture to make a second mixture; and cooling and hardening the second mixture.본 발명은 농축 쌀뜨물을 이용한 농축 쌀뜨물 젤리에 관한 것으로, 본 발명에 따르면 쌀의 가공공정에서 대량으로 발생하는 쌀뜨물은 농축과 살균의 단순한 과정을 거쳐 기능성 식품 소재로써 활용할 수 있다. 이를 이용한 농축 쌀뜨물 젤리는 가공 공정이 단순하여 비용과 시간을 절감할 수 있으며, 쌀의 유효성분을 포함하는 기능성 식품으로써 제공되어 국민, 특히 아이들의 건강증진에 기여할 수 있다.
