A method for producing creams in which a liquid to be treated including a separate cream separated from milk undergoes a sterilization treatment and a homogeneous treatment, the method includes a sterilization step for heating the liquid to be treated, a first homogenization step for homogenizing the liquid to be treated at 50℃ to 95℃, a second homogenization step for homogenizing the liquid to be treated at 50℃ or higher after the first homogenization step, and a dissolved gas reducing step for reducing a dissolved gas before at least the sterilization step and the second homogenization step such that the liquid to be treated is deaerated under a negative pressure of -0.025 MPa to -0.003 MPa of a degassing pressure at a degassing temperature of 50℃ to 95℃, in which at least the dissolved gas reducing step, and the second homogenization step and the sterilization step which are performed thereafter are performed in a series of closed systems filled with a liquid to be treated.將含有分離自乳之分離奶油的被處理液,在進行殺菌處理及均質化處理來製造奶油類的方法中,具有加熱被處理液的殺菌步驟;將被處理液於50至95℃均質化的第1均質化步驟;在第1均質化步驟後,將被處理液於50℃以上均質化的第2均質化步驟;及至少在前述殺菌步驟及第2均質化步驟前,將被處理液於除氣溫度50至95℃、除氣壓-0.025至-0.003MPa之負壓下進行除氣,減少溶解氣體的減少溶解氣體步驟;其中,對被處理液不進行起泡,至少將前述減少溶解氣體步驟,與在其後進行之殺菌步驟及第2均質化步驟,在填滿被處理液之一系列密閉系統內進行。
