The present invention relates to a method for preparing jelly of Momordica charantia, and jelly of Momordica charantia prepared thereby. According to the present invention, jelly is prepared by the use of Momordica charantia, and thus the present invention can be used as functional health food for diabetes patients and diet food for obesity patients. In addition, the bitter taste of Momordica charantia is reduced by using starch, and thus the jelly can be taken in with convenience anytime and anywhere as a meal replacement.
