PURPOSE: Dried persimmon cookies having the flavor and components of dried persimmon, and a producing method thereof are provided to offer the enough amount of fructose to eaters.CONSTITUTION: A producing method of dried persimmon cookies comprises the following steps: producing finely cutting dried persimmon after removing seeds and the stalk to obtain diced dried persimmon mixing 15-30wt% of butter, 10-25wt% of sugar, and 5-15wt% of eggs to obtain a first mixture mixing the first mixture with 10-20wt% of flour, 20-35wt% of whole-wheat flour, and 0.1-0.5wt% of baking soda, and uniformly kneading the obtained second mixture to obtain dough adding 2-40wt% of diced dried persimmon after thinly coating with flour into the dough to obtain final dough and baking the dough at 150-200 deg.
