The invention relates to a biotechnological process for in vitro cultivation of macromycetes of the species Grifola frondosa to obtain a biomass with nourishing properties. According to the invention, the process provides for cultivation of macromycetes of the species Grifola frondosa in submerged condition, on a liquid nutritive medium, followed by transfer thereof into cultivation vessels, sterilization at 121°C for 15 min, cooling at temperatures of 25°C, aseptic inoculation with pure culture mycelium, incubation at a constant temperature of 23...25°C and a stirring rate of 100...200 rpm for 10...14 days, to obtain a biomass consisting of spherical mycelium formations which are separated from the liquid medium by centrifugation, are slowly dehydrated and conditioned as granules of 0.1...0.5 mm.
