The present invention relates to a new method for preparing nutritious salted fish developed to widely use salted fish juice (the following, &prime；salted fish&prime；), a kind of Korean sauces, as a fresh ingredient in optimal fermentation condition, and also as a kind of well-being low sodium Korean sauces. The method for preparing nutritious salted fish is characterized by reuse of a floating waste residue, which is produced by a salted fish fermentation process included in a first process, as a fermentation seed, that is an enzymatic seed for next salted fish fermentation process, thereby promoting fermentation of the salted fish and shortening fermentation time, and fundamentally preventing acidification due to poor fermentation of the salted fish so as to maintain optimal fermentation state all the time. Additionally, the process of fermentation by putting the fermentation seed comprised of the waste residue is selected instead of reducing the amount of salt required for the process of the present invention by 10-20% so that salted fish with relatively low sodium content can be provided, thereby contributing to national health with the well-being salted fish healthier than the conventional high sodium salted fish.본 발명은 한국인의 기호 양념장(醬)의 일종인 젓갈액즙(이하, '젓갈'이라 함)을 보다 신선한 재료로서 최적의 발효(醱酵)상태로, 그리고 비교적 저염(低鹽)식 웰빙 장류(醬類)로써 널리 사용할 수 있도록 하기 위하여 개발한 영양젓갈의 새로운 제조방법에 관한 것이다.본 발명의 액젓 제조방법의 특징은 1차 공정의 액젓 발효공정을 거쳐서 액젓 위에 부상하여 산출되는 부상폐기물인 잔사를 발효 후 회수처리하지 않고, 이 잔사를 다음 액젓 제조공정에서 발효씨앗 즉, 효소종자로써 한번더 활용함으로써 액젓의 발효를 원활히 하고, 발효시간을 단축하며 액젓의 불량 발효현상으로 인한 산폐를 근본적으로 방지하여 항상 최상의 숙성 발효상태를 유지토록 한 것이다.또한 본 발명의 공정에서 소요되는 소금의 투입량을 10~20% 감소시키는 대신 상기 잔사로 구성되는 발효씨앗을 투입하여 발효시키는 공정을 택함으로써 비교적 저염도의 액젓을 보급할 수 있게 되어, 종래의 고염도 액젓에 비해 웰빙 건강 액젓으로 국민보건에 이바지할 수 있도록 한 것이다.
