PROBLEM TO BE SOLVED: To provide an easy, inexpensive and safe industrial production method of yolk protein which is practically usable as food, medicine and a cosmetic materials.

SOLUTION: This production method of yolk protein includes: (1) a process of adding and mixing yolk, water, and dextrin having a specific molecular weight (2) a process of leaving the mixture at rest for a fixed time so as to separate into an upper layer and a lower layer (3) a process of collecting a lower aqueous solution layer which contains yolk protein and almost no lipid (4) a process of producing specific yolk antibodies preservable for a long period, and yolk water-soluble protein containing the antibodies by drying the collected lower aqueous solution layer (5) a process of removing dextrin from the collected lower aqueous solution layer and (6) a process of producing specific yolk antibodies preservable for a long period, and having a high degree of refining, and yolk water-soluble protein containing the antibodies by drying the lower aqueous solution layer from which dextrin is removed. A yolk layer which is generated as a by-product after separating is not damaged and therefore reusable as it is.
