PURPOSE: A manufacturing method of solid-state fermented allium victorialis and fermented allium victorialis are provided to increase antioxidant activity, SOD like activity, DPPH radical scavenging activity and etc and have an excellent antidiabetic effect, thereby being used for the prevention or treatment composition of diabetes or diabetic combination disease. CONSTITUTION: A manufacturing method of fermented allium victorialis comprises: a step of reacting allium victorialis with enzyme by treating the allium victorialis with &alpha；-herbzyme； a step which cultures the product of previous step with at least one microorganism selected from a group consisting of saccharomyces cerevisiae, lactobacillus delbrueckki； a step of extracting the cultured material； and a step of filtering and concentrating the extract. A prevention or treatment composition of diabetes or diabetic combination disease reacts allium victorialis with &alpha；-herbzyme and includes fermented products which are fermented with at least one microorganism selected from a group consisting of saccharomyces cerevisiae and lactobacillus delbrueckki.본 발명은 고상발효법을 이용한 산마늘 발효물의 제조방법 및 산마늘 발효물을 포함하는 당뇨 또는 당뇨합병증 예방 또는 치료용 조성물에 관한 것으로, 보다 구체적으로 산마늘을 α-허브자임으로 처리하여 효소반응시키는 단계； 상기 효소반응시킨 반응물을 사카로마이세스 세레비시아 및 락토바실러스 델브루엑키로 이루어진 군에서 선택된 하나 이상 미생물과 배양시키는 단계； 상기 배양물을 추출하는 단계； 및 상기 추출물을 여과하고 농축하는 단계；를 포함하는 고상발효법을 이용한 산마늘 발효물의 제조방법； 및 산마늘을 α-허브자임과 반응시키고 사카로마이세스 세레비시아 및 락토바실러스 델브루엑키로 이루어진 군에서 선택된 하나 이상 미생물로 발효시킨 발효물을 포함하는 당뇨 또는 당뇨합병증 예방 또는 치료용 조성물에 관한 것이다.
