PROBLEM TO BE SOLVED: To provide jelly containing three kinds of branched chain amino acids consisting of isoleucine, leucine and valine, the jelly having a less dose, having a good flavor and going down smoothly, having excellent in stability, and not causing browning even when heat treatment is subjected.SOLUTION: Jelly contains a gelling agent and three kinds of branched-chain amino acids consisting of isoleucine, leucine and valine, in which (1) the pH of the jelly is higher than 3.6, (2) heat treatment is performed after blending the three kinds of branched-chain amino acids and the gelling agent, and (3) a dose of the three kinds of branched-chain amino acids are packed and sealed in a container.SELECTED DRAWING: NoneCOPYRIGHT: (C)2017,JPO&INPIT【課題】本発明の課題は、一摂取量が少量化され、風味や喉越しが良好で、かつ安定性に優れ、加熱処理を施した場合でも褐変を生じない、イソロイシン、ロイシン及びバリンからなる3種の分岐鎖アミノ酸を含有するゼリーを提供することである。【解決手段】イソロイシン、ロイシン及びバリンからなる3種の分岐鎖アミノ酸、並びにゲル化剤を含有するゼリーであって、(1)ゼリーのpHが3.6より高く、(2)3種の分岐鎖アミノ酸及びゲル化剤の配合後に加熱処理され、かつ、(3)3種の分岐鎖アミノ酸の1回摂取量が容器に充填及び密封されていること、を特徴とするゼリー。【選択図】なし
