PROBLEM TO BE SOLVED: To provide a crepe skin which is puffier, and softener than a prior crepe skin, which is improved for acquiring soft texture, the prior crepe skin is soft, smooth, and has a moist texture, but in aspects of soft texture and crispy texture, they are not always preferable, contrary to thin thickness of the prior crepe skin.SOLUTION: There is provided a crepe skin 1 including various sizes and shapes of air bubbles 2, in production time, non-sweetened meringue in which only egg white is whisked, is blended, therefore the crepe skin 1 comprising various foam structures comprising many air bubbles 2 or open holes 3 which have various shapes and sizes, in the crepe skin 1 which is slightly thicker than a prior crepe skin, is obtained.SELECTED DRAWING: Figure 1
