The present invention relates to a mushroom stem cutting device for cutting a mushroom stem off from a button mushroom comprising the mushroom stem and a pileus. The present invention comprises: a base； a pair of operating rollers placed on the base at a distance from each other； a roller operating unit delivering rotational force to one of the operating rollers； an endless conveyor belt connecting the operating rollers, and including a plurality of through holes formed at regular intervals in a longitudinal direction； a cutting blade for cutting the mushroom stem when the button mushroom is transferred through the conveyor belt while the pileus is supported around the upper part of the through holes and the stem is exposed through the lower part； and a cutting operating unit delivering rotational force to the cutting blade.
