The present invention provides a method for using natural yeast to make old-dough bun. The steps of aforementioned method includes: placing fresh raisin, water and granulated sugar in a container for natural fermentation filtering to obtain probiotic strains liquid adding flour, water and granulated sugar into the probiotic strains liquid according to predetermined ratio slightly stirring to form a thickened liquid sealing and keeping still for fermentation so as to be natural yeast strains using the natural yeast strains to make dough resting the dough four times and kneading the dough three times to sufficiently rest the dough using high pressure steam generated inside the high pressure steamer at final steaming stage to form a transparent film on the surface of the bun performing packaging process after the steaming process to obtain final product of old-dough bun made by natural yeast.一種利用天然酵母菌製作老麵饅頭之方法,其步驟包括使用新鮮葡萄乾、水及砂糖置於容器內自然發酵,濾淨後得到液體益生菌菌種,再將該液體益生菌菌種依照比例加入麵粉、水及砂糖,些微攪拌成稠狀液體後密封靜置發酵,即成為天然酵母菌菌種,利用該天然酵母菌菌種製作麵團後,經過四醒三揉的醒麵、揉製階段,使該麵團得到充分的醒麵,並於最後蒸製階段利用該高壓蒸箱內部熱氣產生之高壓與蒸氣,令該饅頭表面形成一透明薄膜層,蒸製作業完成後進行包裝作業,即得到利用天然酵母菌製作出之老麵饅頭成品。
