PURPOSE: A drying and aging apparatus for meat is provided to reduce the decomposition rate of the meat by the secondary pollution of water, and to prevent the dew condensation when humidifying meat. CONSTITUTION: A drying and aging apparatus for meat comprises the following: an aging unit for storing and aging the meat, formed in a box shape to be opened and closed by a door(12); a cold air supplying unit(20) reducing the temperature inside the aging unit by supplying cold air; a humidifying unit(30) heating and sterilizing supplied water, and humidifying the inside of the aging unit using the water; a dehumidifying unit(40) dehumidifying the inside of the aging unit, and increasing the temperature inside the aging unit; a body(31) for storing the water; a water supply port installed on one side of the main body for supplying the water; a water feeding valve controlling the water supply amount by being installed on the upstream of the water supply port; a heater heating and sterilizing the water inside the body; an outlet installed on the upper side of the main body for supplying the water to the aging unit; and a spraying pipe(38) installed on the downstream of the outlet for spraying the water.본 발명은 육류의 건조숙성장치에 관한 것으로서, 육류를 저장하여 숙성시키는 숙성부와, 이 숙성부 내에 냉기를 공급하는 냉기공급부와, 숙성부 내에 가습하는 가습부와, 숙성부 내에 제습하거나 온도를 상승시키는 제습부를 포함하는 것을 특징으로 한다. 따라서, 본 발명은 가습부의 가열 소독에 의해 가습시 급수의 오염을 방지함으로써, 가습시 급수의 2차 오염에 의한 육류의 폐사율을 감소시키고, 위생상 안전한 건조숙성육을 제조할 수 있는 효과를 제공한다.
