The present invention relates to a fish fillet and a preparing method thereof. The fish fillet preparing method includes the steps of: defrosting frozen fish in a refrigerated manner to make the fish body temperature be in the range of -1C to -5C (S10)； cutting the head parts from the defrosted and refrigerated fish (S20)； arranging the fish in a vertical direction to arrange the tail parts of the fish without the head parts and cutting the fish in the center from the tail parts and through the body to cut the fish bodies in half (S30)； and securing the fish fillets by removing the byproduct, bones, and skin from the fish bodies cut in half (S40). The secured fish fillets are maintained in the range of -1C to -5C. According to an embodiment of the present invention, the frozen fish can be naturally defrosted in a defrosting chamber without using any water to prevent the moisture from entering the ingredients.
