PURPOSE: An apple cutting apparatus capable of reducing the work of an operator is provided to prevent apples from browning during cutting processes. CONSTITUTION: An apple cutting apparatus comprises the following: a tank(10) storing browning prevention liquid, including an opening on the upper side and a chute(11) on the lower side； a table(20) covering the upstream side of the tank, and including a through-hole with a sheet unit(22) on the inner circumference； a large-diameter tubular unit inserted into the through-hole； a small-diameter tubular unit protruded from the lower side of the large-diameter tubular unit； an apple cutting unit including plural blades； an ascending and descending pressure unit(40) pressurizing the apples on the apple cutting unit； an apple hanging conveyor(50) including plural carrier walls(52) installed on a belt(51) for transferring cut apples； a storage tank(70) for storing the browning prevention liquid flowing inside the tank； a browning prevention liquid pipe(80) connected to the storage tank and the tank； a core discharging pipe(90) discharging cores from the apples； and the belt including plural holes(53, 54).본 발명은, 갈변방지액이 담겨져 있고 하류단에 하류방향측으로 상향 경사진 슈트가 구비된 탱크의 상류단 위에 테이블을 마련하고, 가압되는 사과의 과육부분과 코아부분을 절단하여 분리해낼 수 있는 사과절단날을 상기 테이블에 탑재하고, 상기 사과절단날에 얹어 놓여진 사과를 가압하기 위한 승하강가압부를 상기 테이블에 탑재하고, 상기 탱크의 하류단에 상기 갈변방지액에 부유된 절단 과육부분을 상기 탱크의 하류단의 상기 슈트에 인접한 이송컨베이어 위에 이동시키기 위해 사과걸음컨베이어를 상기 테이블에 대하여 하류측으로 인접한 상기 탱크의 상단에서 상기 슈트 위까지 뻗어 있게 상기 탱크에 탑재하고, 상기 탱크의 하류단 밑에 상기 탱크의 상류단에서 하류단으로 흐르는 갈변방지액을 저장하는 저장탱크를 마련하고, 상기 저장탱크에 저장된 갈변방지액을 상기 탱크의 상류단에 공급하는 갈변방지액공급수단을 상기 저장탱크와 상기 탱크 상류단 사이에 마련하고, 그리고 상기 사과절단날에 의해 사과로부터 절단된 분리된 코아부분을 상기 탱크 밖으로 배출시키는 수단을 상기 탱크의 상류단에 마련함으로써, 사과절단공정시에 갈변되는 것을 방지하면서, 종래보다 작업자의 공수를 절감하는 것을 가능하게 할 수 있다.
