The present disclosure relates to a process for manufacturing Aloe Vera gel comprising the steps of cleaning and washing fresh Aloe Vera leaves cutting the tip, tail and serrated edges filleting sanitizing extracting the gel separating the fibers adding preservatives, antioxidants, mould inhibitors and stabilizers and filtering. There is no application of heat during the entire process. The present disclosure also relates to an apparatus for manufacturing Aloe Vera gel wherein said gel processor is provided with a cooling tower from which chilled water is circulated to prevent an increase in temperature of the Aloe Vera gel.
