PURPOSE: Red pepper paste using acer mono max sap, and a producing method thereof are provided to improve the taste and the flavor of conventional red pepper paste using the acer mono max sap and aspergillus oryzae strains. CONSTITUTION: A producing method of red pepper paste using acer mono max sap comprises the following steps: steaming soybeans soaked in water for 24 hours at 100 deg C for 5 hours; injecting aspergillus oryzae strains into the steamed soybeans after cooling at 60 deg C and crushing; molding the soybean mixture into 1kg size to obtain soybean blocks; drying the soybean blocks at 45 deg C for 30 days, and crushing the soybean blocks to obtain powder; steaming water soaked glutinous rice after steaming for 20 minutes at 100 deg C to obtain glutinous rice powder; sterilizing the acer mono max sap for 20 minutes at 121 deg C; mixing 5wt% of soybean block powder, 42wt% of glutinous rice powder, 33wt% of acer mono max sap, 10wt% of red pepper powder, and 10wt% of bay salt, and saccharifying the mixture for 5 hours at 60 deg C; and sterilizing the mixture for 30 minutes at 80 deg C before aging for 60 days.본 발명은 고로쇠나무의 수액을 이용한 고추장 및 이의 제조방법에 관한 것으로, 보다 상세하게는 재래식 고추장제조방법과는 달리 우수한 발효조건 및 메주와 고로쇠나무의 수액을 이용하는 것으로 칼슘, 칼륨 및 세레늄 등의 다양한 무기질과 유기산, 유리아미노산, 항산화활성이 높아 여러 가지 성인병 예방과 인체 노화방지에 의한 노화억제 효과가 있다.
