The present invention relates to a method for preparing oriental melon pickles by using dehiscent or ripe oriental melons. More specifically, by using oriental melons that are dehiscent, ripe, or damaged, and thus have lost product values and would be discarded, the method can prepare oriental melon pickles which retain the characteristics of oriental melons, do not contain preservatives, edible colors, etc., and are healthy due to containing Cnidii rhizoma, Angelica gigas, Chinese matrimony, liquorice, peony, and the like. According to the method of the present invention, only oriental melons that are dehiscent, ripe, or damaged so as to lose product values, are collected and deseeded; while leaving the skin thereof intact, the oriental melons are each destemmed, sliced into two pieces, and are washed clean with water; salt water is prepared in order to give a crisp and chewy texture to the oriental melons, and the oriental melons are placed therein; elvan rocks are placed on the oriental melons to apply a pressure thereon over 24 hours; the salt water mixed with liquid produced from the oriental melons is discarded; and the oriental melons are transferred to a different container, and mixed with starch syrup. The oriental melons mixed with the starch syrup are placed in a container and pressed again with elvan rocks over 24 hours. In addition, water mixed with vinegar and sugar is boiled and cooled, to prepare a first liquid. In addition, water mixed with Cnidii rhizoma, Angelica gigas, Chinese matrimony, and liquorice is boiled for 8 hours then cooled, to prepare a second liquid, and the first liquid and the second liquid are mixed together and diluted with soju with 30% alcohol to prepare an immersion solution. Finally, the chewy oriental melons that have been processed twice are placed into the immersion solution and then aged therein at 15-20 degrees Celsius over seven days, to produce oriental melon pickles that are nutritious, delicious, and chewy.COPYRIGHT
