The invention relates to a restructured meat product, comprising; (A) a fibrous material containing soy protein, soy cotyledon fiber, wheat gluten and starch, wherein said fibrous material is an extrudate and wherein said soy cotyledon fiber is present in the fibrous material in an amount of from 1% to 8%, by weight on a moisture free basis, said wheat gluten is present in an amount of from 10% to 30% by weight on a moisture free basis, and said starch is present in the fibrous material in an amount from 5% to 15%, by weight on a moisture free basis; (B) a comminuted meat, wherein said comminuted meat is derived from an animal tissue comprising muscle tissue, organ tissue, connective tissue, skin or mixtures of each with the other; and (C) water.
