PROBLEM TO BE SOLVED: To provide an unpolished rice noodle having sugar content equal to conventional unpolished rice noodle and rich in various minerals such as potassium and magnesium.SOLUTION: There is provided an unpolished rice noodle having a total value of masses of potassium and magnesium in the unpolished rice noodle made by using unpolished rice applied to a scratching treatment of 43 to 64 mass% based on a total value of masses of potassium and magnesium in the unpolished rice before applying scratching treatment to a skin of the unpolished rice and a Brix value obtained by a koji discharging simple analytic testing method of 11 or more. There is provided an unpolished rice noodle made by using the unpolished rice with conducting the scratching treatment on the skin by an ultrasonic vibration sieve machine, without the skin of the unpolished rice being scraped away and maintaining various minerals such as potassium and magnesium rich.SELECTED DRAWING: NoneCOPYRIGHT: (C)2016,JPO&INPIT【課題】従来の玄米麹と同等の糖度を有し、かつ、カリウムやマグネシウムなどの各種ミネラル分が豊富に含まれた玄米麹の提供。【解決手段】玄米の表皮に傷付け処理を施す前の玄米中のカリウム及びマグネシウムの質量の合計値に対して、傷付け処理を施した玄米を用いて製麹した玄米麹中のカリウム及びマグネシウムの質量の合計値が43~64質量%であり、出麹簡易分析試験法により得たブリックス値が11以上である玄米麹。超音波振動篩機によって表皮に傷付け処理を施し、玄米の表皮が無献に削り取られることがなく、カリウムやマグネシウム等の各種ミネラルが豊富に保もたれた玄米を用いて製麹した玄米麹。【選択図】なし
