Novelty: an instantaneous dehydrated salad sauce to be directly spread in the form of powder over a salad or other foodstuff is disclosed. Production process: 1) preparation of a stable natural emulsion composed of vegetal oil, egg yolk, maltodextrine, Arabic gum or carboxymethyl-cellulose (CMC) and citric acid as acidification means; the value of the active acidity may be regulated at the desired level; 2) dehydration of the emulsion until obtaining a ready-to-use powdered dressing. Embodiment: the invention finds application in home-made meals, meal on-the-go, travel meals, cateringsand restaurants. More precisely, said powdered sauce can be spread over salads and other foodstuff such as pasta, raw and cooked vegetables, fruit entire or in slices, cured meat products,processed meat, cooked fish, cheese, cooked eggs and combinations of all of them, with no previous dispersion into water.
