PROBLEM TO BE SOLVED: To produce a dried product restoring taste having pungent flavor obtained when mashed fresh Japanese radish when adding water to the dried product and further to utilize such the dried product as a lipid metabolism improving agent.

SOLUTION: Japanese radish is impregnated with saccharide and then, the mixture is dried at &le60°C so as to has &le10% water content or Japanese radish is sliced into &le3 mm thickness and then dried so as to have &le10% water content within 30 hr at &le50°C to produce the dried product of Japanese radish. The dried product of Japanese radish is formulated and the resultant preparation is administered as the lipid metabolism improving agent.
