A mixture for the preparation of bread with low acrylamide content, that containing calcium chloride in an amount of 0.1 g to 3.0 g per 100 g of a mixture and dried active yeast in an amount not less than 1 g up to 100 g per 100 g of a mixture or contained only dried active yeast in an amount not less than 1 g more than 10 g per 100 g of a mixture. A process for the preparation of bread from the mixture, comprising calcium chloride and dried active yeast or only dried active yeast, in which the bread to rise at the temperature from 25 to 30 ø C, 130 minutes and then is baked at the temperature from 150 to 170 ø C, 50 minutes.A mixture for the preparation of bread with low acrylamide content, that containing calcium chloride in an amount of 0.1 g to 3.0 g per 100 g of a mixture and dried active yeast in an amount not less than 1 g up to 100 g per 100 g of a mixture or contained only dried active yeast in an amount not less than 1 g more than 10 g per 100 g of a mixture.
