A process for continuous cooking of slices of potatoes of various styles and types in cooking oil, the process being carried out in a potato chip cooking apparatus (10) including at least three separate cooking oil baths to perform at least three stages of different cooking (11, 12, 13), each cooking stage (11, 12, 13) being equipped with independent means of oil heating, oil circulation and temperature control, where the apparatus (10) also includes rotating means stirring and mixing in the form of paddle wheels (24, 25, 26), and motor and control means for moving the paddle wheels (24, 25, 26), including the method the steps of: introducing a volume of slices of uncooked potatoes in the first cooking stage (11) in order to extend a batch of slices in the cooking oil bath of the first cooking stage (11); shake vigorously, mix and move the batch of potato slices for a predetermined residence time in the first cooking stage (11); transfer the batch of potato slices from the first cooking stage (11) to the second cooking stage (12) in a flipping and stirring action; keep the batch of slices in the second cooking stage (12) while stirring vigorously, mix and remove the batch of slices for a second cooking time and predetermined permanence; transfer the batch of potato slices from the second cooking stage (12) to the third cooking stage (13) in a flipping and stirring action; keep the batch of slices in the third cooking stage (13) while vigorously stirring, mix and remove the batch of slices for a third cooking time and predetermined permanence; and then, continuously, remove the batch of slices from the third stage of cooking (13), where the steps of vigorously stirring, mixing and removing the batch of potato slices are performed by controlling each paddle wheel (25, 26) so that it turns in the right and left directions.Un proceso para la cocción continua de rodajas de patatas de varios estilos y tipos en aceite de cocción, realizándose el proceso en un aparato de co
