Supplied cream is separated into butter grains and buttermilk in the buttering cylinder. The method involves measuring or predefining a characteristic value of the cream or the produced butter, detecting an actual value of the current drive power of the beater, determining a setpoint value for the drive power of the beater as a function of the characteristic value, and adjusting the beater drive to this setpoint value.
