PROBLEM TO BE SOLVED: To provide oil-in-water type emulsion for polishing excellent in emulsion stability, color tone, acid resistance, coating properties to food, luster on a food surface, and maintainability of a brush and to provide a production method thereof.SOLUTION: There is provided oil-in-water type emulsion for polishing in which at least an enzymolysis type separated soybean protein, liquid fat, water an alkali agent and sugar are blended.
