Preparing a cheese powder for reconstitution of a cheese product, comprises: producing (1) a dairy mixture comprising components of fat and protein material, where the contents of fat and protein material relative to the dry mixture content are adjusted corresponding to levels specified in the cheese product after reconstitution; coagulating the dairy mixture by renneting (2) to obtain a coagulum; cutting (3) the coagulum to obtain cheese mixture; functionalizing (5) the cheese mixture by emulsification operation; and drying (6) the functionalized cheese mixture.
