The present invention provides a method for manufacturing sugar cane ginger slices, which mutually combines an excellent pharmacological effect of ginger itself with an effect of unrefined sugar of sugar cane to compensate for effective ingredients of ginger segments lost because of a method like heating by the unrefined sugar of the sugar cane, thereby enhancing content of various nutrient components and having deep sweet taste, excellent flavor, and excellent appearance like colors and chewing sense to ensure palatability of a taker and to show a health increasing effect. If the method for manufacturing the sugar cane ginger slices is introduced, manufacturing processes can be consistent and simplified such that high quality sugar cane ginger can be mass-produced. In addition, the sugar cane ginger slices manufactured by the method prevents blood glucose rise when taken, increases immunity, enables a user to take a great quantity of various effective components contained in the ginger and the unrefined sugar of the sugar cane, unlike conventional ginger slices using sugar or like, is easily supplied to a taker who was repulsed by a strong sweet taste or is suffering from an adult disease like diabetes, and is easily treated and stored for a long time to be usable as a healthful favorite food. The method includes a step of mixing ginger segments with the unrefined sugar of the sugar cane to manufacture a ginger segment mixture, performing a pressure reduction process for the ginger segment mixture, preliminarily heating the mixture, secondarily heating the mixture to form oil film on a surface of the ginger segment and tertiarily heating the mixture.본 발명에 따른 사탕수수 편강의 제조방법에 따르면, 생강 자체의 탁월한 약리적 효과와 비정제 사탕수수 원당의 효능을 상호 접목하여, 가열 등의 방법에 의해 유실된 생강 절편의 유효성분을 비정제 사탕수수 원당으로 보충하여 각종 영양성분의 포함함량이 높을 뿐만 아니라, 감미로운 깊은 맛과 우수한 향, 색깔 등의 외형과 저작감 등이 우수해 섭취자의 우수한 기호성을 확보함과 동시에 건강 증진효과를 부여할 수 있는 사탕수수 편강을 제조할 수 있다. 상기와 같은 사탕수수 편강의 제조방법을 도입하면 제조공정의 일관성 및 단순화를 달성하여 우수한 품질을 갖는 사탕수수 편강을 대량 제
