The present invention relates to a method for preparing hard-boiled brown seaweed stem which is capable of making a product that corresponds with consumer preference by making hard-boiled side dishes using a stem portion of a bottom part of the brown seaweed that is rarely used for food since it is hard as a portion directly above the root of a collected brown seaweed, and hard-boiling the cut brown seaweed stem portions after cutting the brown seaweed stem portions into the form of a thin liplike shape through lateral cutting instead of traditional longitudinal cutting.
