The utility model discloses a method of producing brined oyster mushroom involving the steps of sorting, washing, blanching, brining/ curing, harvesting and canning the brined oyster mushroom. Blanching is done for 15-30 seconds by steam method. The brine solution comprises the following: 2.5-7.5 pcnt salt, 0.1-0.3 pcnt alum and 0-3 pcnt sugar. Brining/curing the oyster mushroom is done for 12-24 hours after which is then canned.
