A fresh plum vinegar sauce composition and production process thereof includes ingredients of prunus juice, prunus mume (Chinese plum) juice, soy sauce, natural edible vinegar, natural edible salt, and the process thereof to produce a fresh plum vinegar sauce comprises the production steps of ingredient preparation, concentration, integration, seasoning, and canning. The production process of the fresh plum vinegar sauce of the present invention is first to mix the prunus juice and the prunus mume juice together, followed by slowly boiling for concentration. Next, add the soy sauce and natural edible vinegar separately to mix and integrate the flavors of prunus juice, prunus mume juice, soy sauce, natural edible vinegar together. Then, add the natural edible salt to adjust the salinity of the sauce. A fresh plum vinegar sauce then is produced. Finally, the fresh plum vinegar sauce is canned and the production process thereof is completed.一種甘露醬的組成份及其製程,其成分包含有李汁、梅汁、醬油、天然食用醋以及天然食用鹽,並透過備料、濃縮、融合、調味、罐裝等步驟製成甘露醬;本發明甘露醬在製造上先將李汁與梅汁混合後進行熬煮並濃縮,接著再分別加入醬油與天然食用醋,使李汁、梅汁、醬油、天然食用醋的風味能相互融合,再來加入天然食用鹽調整鹹度後便可取得甘露醬,最後將甘露醬裝罐即完成甘露醬的製程。
