An improved method for making a p. vulgaris bean extract that results in an extract having high α-amylase inhibitory activity and low hemagglutinin activity. The method involves treating the beans to selectively denature the hemagglutinin. A p. vulgaris bean extract is provided, having high α-amylase inhibitory activity and low hemagglutinin activity. A treatment for diabetes or method for reducing blood glucose level is disclosed using the p. vulgaris bean extract disclosed herein.La présente invention concerne un procédé amélioré de fabrication d'un extrait de haricot P. vulgaris qui résulte en un extrait ayant une activité inhibitrice élevée de l'α-amylase et une faible activité hémagglutinine. Le procédé entraîne le traitement des haricots afin de dénaturer sélectivement l'hémagglutinine. L'extrait de haricot P. vulgaris qui est fourni présente une activité inhibitrice élevée de l'α-amylase et une faible activité hémagglutinine. L'invention concerne également un traitement du diabète ou un procédé de réduction du niveau de glycémie à l'aide de l'extrait de haricot P. vulgaris.
