PROBLEM TO BE SOLVED: To provide a method for the sterilization and disinfection of early sprouting vegetable seeds sprouting in early stage by the application of water to the seed, e.g. the seed of white radish sprout or bean sprout, by immersing the seed in an acidic water produced by electrolysis, and effective for preventing the latency of the sprouting disorder and growth disorder caused by the available chlorine component in the acidic water formed by electrolysis. SOLUTION: The seed of an early sprouting vegetable is immersed in a sterilizing and disinfecting liquid comprising an acidic water produced by electrolysis and having strong acidity at an immersion temperature of -1 to +5°C for≤5 hrs. Since the treatment temperature is low in the immersion treatment compared with normal temperature and the treating time is short, the generation of seed coat crack (sprouting) of the seed during the immersion treatment is remarkably suppressed to prevent the intrusion of available chlorine component of the electrolysis-produced acidic water into the seed and solve the problem of the generation of sprouting disorder and growth disorder in the culture of a vegetable to use the seed.
