The present invention relates to low sodium fermented salt containing gamma amino butyric acid (GABA), and a manufacturing method thereof, and more specifically, to microorganism fermented salt which, among components of salt, GABA useful to a human body is contained in, and sodium harmful to the human body is reduced from, and a manufacturing method thereof. The method comprises the following steps: (a) inoculating lactobacillus in a medium including glutamate, and proliferating and cultivating the inoculated lactobacillus (b) adding salt to the medium in which the lactobacillus is cultivated, and then performing re-cultivation (c) filtering the re-cultivated medium and (d) drying filtered cultivation liquid to collect salt. In the fermented salt according to the present invention, sodium harmful to a human body is reduced, and GABA having various biological activities is included, and thereby being useful to prevention typical adult diseases such as high blood pressure.COPYRIGHT KIPO 2017본 발명은 GABA를 함유하고 나트륨이 저감된 발효소금 및 이의 제조방법에 관한 것으로, 더욱 상세하게는 소금의 성분중 인체에 유용한 GABA를 함유하고, 인체에 유해한 나트륨을 저감시킨 미생물 발효소금 및 이의 제조방법에 관한 것이다.본 발명에 따른 GABA를 함유하고 나트륨이 저감된 발효소금의 제조방법은 (a) 글루타메이트를 포함하는 배지에 유산균을 접종하고, 증식 배양시키는 단계 (b) 유산균이 배양된 배지에 소금을 첨가한 후, 재 배양시키는 단계 (c) 재 배양된 배지를 여과시키는 단계 및 (d) 여과된 배양액을 건조시켜 소금을 회수하는 단계를 포함한다.본 발명에 따른 발효소금은 인체에 유해한 나트륨은 저감되고, 다양한 생리활성을 갖는 GABA를 포함하고 있으므로, 고혈압과 같은 대표적인 성인병 예방에 유용하다.
