Disclosed is a salt product which comprises particles containing sodium chloride and an organic material that is a solid at ambient temperature, the particles of said product having a structure comprised of individual crystallites of sodium chloride attached together in the particle wherein more than 95% of the particles have a size less than 50ìm and wherein a substantial proportion of the particles are hollow and are formed of an outer shell of said crystallites, wherein said product can be obtained by spray drying a solution of the recited components. Further disclosed is a foodstuff such as bread, a meat or fish product, or sauce which comprises a salt product as defined above. Further disclosed is a product as defined above which comprises an additive such as a carbohydrate / maltodextrin, flavour, fat, or a pharmaceutical (such as aspirin).
