In a method for selecting apples for the manufacture of an apple juice, disclosed method comprises the following steps: removing water from the surface of the apple； coming in contact with electrodes of different polarities to a first point of the apple with the water removed therefrom and a second point different from the first point； measuring the magnitude of the current flowing to a third point of the apple from which the water has been removed by using an ammeter； determining that there is damage to the surface of the apple from which the water has been removed when the magnitude of the measured current is equal to or less than a predetermined first reference value or a predetermined second reference value is higher than the first reference value； and selecting the apple with bruises. Specifically, the present invention provides the method for manufacturing a hygienic apple juice while preserving the nutrients of the apple as much as possible.사과즙의 제조를 위한 사과의 선별방법에 있어서, 사과 표면의 물기를 제거하는 단계, 상기 물기를 제거한 사과의 제1 지점 및 상기 제1 지점과 상이한 제2 지점에 서로 상이한 극의 전극을 접촉시키는 단계, 전류계를 이용하여 상기 물기를 제거한 사과의 제3 지점에 흐르는 전류의 크기를 측정하는 단계 및 상기 측정된 전류의 크기가 소정의 제1 기준값 이하이거나, 상기 제1 기준값보다 높은 소정의 제2 기준값 이상인 경우, 상기 물기를 제거한 사과의 표면에 손상이 있는 것으로 판단하는 단계 및 표면에 손상이 없는 사과만을 선별하는 단계를 포함하는 방법이 개시된다.
