PURPOSE: A method for producing germinated brown rice is provided to enhance amino acid content by dipping brown rice in a solution containing a silk amino acid, and germinating. CONSTITUTION: A method for producing germinated brown rice with enhanced amino acid content comprises: a step of immersing brown rice in an immersion liquid containing a silk amino acid at 25~35 deg. C for 24-48 hours; a step of germinating the immersed brown rice in a germination liquid containing the silk protein at 25-35 deg. C for 24-48 hours; and a step of immersing the brown rice in a coating solution containing the silk amino acid and coating at room temperature and at 100-200 rpm for 2-5 hours. The silk amino acid is prepared by hydrolysis of sericin or fibroin protein.본 발명은 실크 아미노산을 이용한 아미노산 성분이 강화된 발아현미 및 이의 제조방법에 관한 것이다. 본 발명에 따른 발아현미는 현미를 실크 아미노산이 함유된 수용액에 침지 및 발아시키고 침지 코팅 처리함으로써, 일반 발아현미에 비해 다양한 아미노산 성분의 함량을 현저히 증가시킨다.
