The present invention relates to a method of damaging aquatic biological cell structure. The method comprises the following steps: (a) providing an aquatic organism liquid which contains aquatic organisms and water； (b) removing part of the water in the aquatic organism liquid to form a to-be-processed aquatic organism slurry； (c) placing the to-be-processed aquatic organism slurry in a pressure vessel； (d) introducing a compressed gas into the pressure vessel to allow the compressed gas and the water in the to-be-processed aquatic organism slurry to form an acid liquid, by which the aquatic biological cell structure is hydrolyzed and damaged； and (e) carrying out a pressure reduction step to separate the compressed gas.本發明係關於一種使水產生物細胞結構破壞之方法，該方法包括以下步驟：(a)提供一水產生物原料液，該水產生物原料液包括水產生物及水份；(b)移除該水產生物原料液之部分水份，以形成一待處理水產生物漿液；(c)將該待處理水產生物漿液置於一壓力容器中；(d)將一壓縮氣體導入該壓力容器中，使該壓縮氣體與該待處理水產生物漿液中之水份形成酸液，並藉由該酸液使水產生物細胞結構水解破壞；及(e)進行一降壓步驟，以分離該壓縮氣體。
