A fermented foodstuff composition for human consumption is prepared by fermenting a foodstuff substrate with a lactic acid producing bacteria, the lactic acid bacteria being characterised by: a) being viable under the conditions prevailing in the human gastrointestinal tract; b) being a bacteria capable of aggregating and/or coaggregating with one or more pathogens such as Salmonella, E. Coli and/or Clostridium; and c) being able to produce at least 150mMol of lactic acid in 24 hours upon fermentation at 30ºC in a growth medium consisting of MRS broth containing 2% by weight glucose. Such a concentration of lactic acid will inhibit the growth of pathogens. The lactic acid producing bacteria is preferably Lactobacillus salivarius or Lactobacillus plantarum. The foodstuff substrate may comprise milk or cereals.
