A device, suitable for assembling foodstuffs into a sushi roll, comprises a chassis 15, a handle 20, a plurality of rolling plates and a mechanism 30 releasably secured to the chassis 15 and connecting the rolling plates with the handle 20. A first rolling plate 22 comprises parallel outer and inner sections, and in a first rolling operation, the mechanism 30 symmetrically rotates first 22 and second 24 rolling plates relative to a central rolling plate 26. In a second rolling operation, the mechanism 30 is further adapted to rotate the outer section of the first rolling plate 22 relative to the inner section. The central rolling plate 26 comprises two mounting blocks 25 for centreing a removable rice guide member (27, figure 2) consisting of an oblong plate of predetermined thickness. It has a central aperture which defines a predetermined volume to be filled with rice or other foodstuff.
