PROBLEM TO BE SOLVED: To provide a soy sauce in which unfavorable flavor such as bad aftertaste and burnt taste, and deteriorated outdated flavor, can be suppressed, and which comprises mild flavor which is provided in normal concentrated taste soy sauce, mellow and harmonic taste, and concentrated taste which is unique to conventional wooden tank brewage soy sauce.SOLUTION: A soy sauce is configured so that, in a brewing step, unrefined soy sauce is fermented and matured in a wooden tank, and the soy sauce has densities of isobutyric acid and isovaleric acid, which are 0.3-1.1 times of those of concentrated taste soy sauce.SELECTED DRAWING: None
